Finally found some time to whip up another pony - Twilight Sparkle! Just in time to make her a Christmas present to myself. :P

Additional minor edit to the base pattern to tighten the face's profile shape - I noticed that the last few minky ponies looked a little chubby due to the knit stretch.

I just started with a base pattern roughed out from paper towels and iterated on the design with fabric, pinning each iteration on the mannequin pony I made some time back to test-fit before sewing them into the seams on the actual pony.

Regardless, thanks for the tips. I actually should make a mannequin, considering I don't really have material to spare. Now that I have that, all I need to do is getting over procrastination...

Don't sew the paper towels! I just use them for rough sizing. The real tests should be done with fabric.

I understood you meant for sizing and shaping. Card paper, well more or less, printer paper is obviously for fabric body scale and shape. So paper towels aren't a huge switch, in fact it's better for the mane to use paper towels considering it shapes better than tougher paper. I was just amazed, I never thought of using it.
